Okay, so meatless lasagna that satisfies meat lovers is easy,


-Cauliflower Lasagna-

riced Cauliflower
oil
cumin
chipotle powder
paprika
onion powder
dehydrated garlic crumbles
salt

tomato sauce (mexican style)
tomato paste
tomatoes diced in can (need sauce)
enchilada sauce

béchamel sauce with chipotle pepper sauce

cotija cheese
Queso fresco
ricotta cheese

Black pepper

Pan fry up cauliflower, once toasty add in spices and sautee until tender and homogenized.

in a pot, combine tomato ingredients to make a sauce, add salt as needed

Make a béchamel sauce, add in chipotle sauce from can/jar to flavor until rosy pink.

Assemble lasagna using sauce on bottom, order is up to you, I like to alternate cauliflower and béchamel layers, cheese and sauce on every layer.
5.
On top of finished lasagna, generously apply fresh black pepper all over the top.
6.
Bake until lasagna is cooked to perfection.
