Is he allowed to do that? Here if you try to disinherit people, they just have the courts overturn it.

I've never done probate but my (20 year old ) memory of what I had to learn for the bar was that you can disinherit anyone but your spouse. They get a statutory minimum. No one else has any right to your estate and you can disinherit them but in the case of those you would be expected to leave shit to ( children ) you have to make your intentions clear. Generally this is done by leaving them a dollar (or a similar pittance) so that it is clear to the court that you considered them. If you fail to mention them at all the court may think it was an over site and correct it. ( For example, if you had ten children and your will referred to 9 of them and left them 10,000 dollars each, the judge may give the other the same since it appears like a mistake, naming that tenth one with a pittance shows it was intentional). A family member can attack the validity of a will, but if it is properly executed and the testator was mentally competent and not subject to undue influence it is rarely successful.
